These happen to be one of my favorite types of grilled cheese sandwiches. I had my first one a few years ago when I went to a place called Zoe’s here in Houston. Since I do live a bit far from this restaurant on the weekends, I thought I’d take a stab at it and it turned out even better than the sandwich I have at the restaurant.
Needless to say, I barely ever go to Zoe’s now and for $10.00 I can make a lot of these sandwiches, but I don’t because that would be a lot of feta and not good for my stomach.
2 slices of bread
Feta cheese (crushed)
4 fresh basil leaves
1. Cut basil leaves and onions into strips, cut tomato into round slices.
2. Carmelize onions. I used this tutorial on how to carmelize onions and I also added a bit of garlic for taste.
3. Lightly toast slices of bread then spread thin layer of butter on each slice, then a thin layer of pesto (optional) on other side of each slice.
4. Place buttered-sided slices on to pan (low heat). Place tomato slices, basil leaves, and a few tablespoons of feta on one slice. Cover with other bread slice and grill each side till lightly brown or until feta becomes creamy. Serve warm.
